• 7 ozs almond paste (about 1 cup), crumbled
• 1 cup plus 1 Tbsp sugar
• 2 large egg whites
• 1/2 cup matzoh cake meal (see notes)
• 1/4 tsp salt
• 3 lbs tart apples such as Granny Smith, peeled, cored, and sliced
• 1 lb strawberries, rinsed, hulled, and sliced
• 2 Tbsps lemon juice
• 1 1/2 Tbsps potato starch (see notes)
