2 medium onions, chopped (2 cups)

3 celery ribs, chopped (1 1/2 cups)

2 large Granny Smith apples, peeled if desired, cored, and chopped (3 cups)

1 1/2 cups chicken broth

1 teaspoon salt

3/4 teaspoon freshly ground pepper

2 large eggs, lightly beaten
