3 cups of organic mixed greens

*3 medium blanched leeks, cut into 1/4 inch disks (or baby leeks, if you have access to them)

2-3 small Fuyu persimmons, sliced very thinly

1/4 cup of toasted pine nuts

5 slices fresh prosciutto, torn into bite-sized pieces

Parmesan shavings, to taste

salt and pepper, to taste
