Loved it the first time and continue to love it. Have some picky eaters in the family and white this I don't. Followed the recipe almost exactly ( i don't actually measure, just eye it) and it turns out great.

Ingredients for 4 servings

1 lb fresh chorizo in casing*

1 tablespoon olive oil, plus more to finish

1/2 a medium onion, chopped (about 1 cup chopped)

2 cloves garlic, minced

1/2 cup chicken broth

1 head escarole, washed, trimmed and roughly chopped

1 15-ounce can white beans, drained and rinsed

3-4 whole roasted peppers, roughly chopped (about 1 cup chopped)

1 tablespoon sherry vinegar

Salt and freshly ground pepper, to taste
