Ingredients for 3 servings

2 teaspoons ground coriander

1/4 cup slivered almond, toasted in a dry pan until golden

2 tablespoons olive oil

1 pinch saffron

4 garlic cloves , peeled and crushed

1/2 teaspoon ground cinnamon

1/2 cup dry sherry

1/2 cup golden raisin (sultanas)

6 lamb shanks

1 preserved lemon , rinsed and flesh discarded, sliced (OR 1 lemon and 2 teaspoons salt)

1/4 cup parsley

2 cups chicken stock

fresh ground black pepper

5 cm gingerroot , grated

2 large onions , peeled and finely chopped
