1 to 2 ripe plum tomatoes , cut in half

1/2 medium red onion , thinly sliced

2 small Japanese eggplants , cut into 1/4-inch rounds

2 Tbsp. red wine vinegar

1/2 cup diced fresh mozzarella

8 basil leaves , thinly sliced

1/4 tsp. salt
