Serves 4-6 people

3 Tbsp. (45 mL) olive oil

1 onion, chopped

3 garlic cloves, chopped

1 red pepper, finely diced

4 tomatoes, peeled, seeded and diced

1 cup white wine

2 1/2 cups (625 mL) chicken broth

1 1/4 cup (310 mL) long grain rice

100 grams of saffron

Seafood - Tuna, Salmon, calamari, (cut in small bite sizes) - whatever seafood you like can be added.

8-12 unpeeled fresh shrimps

1 lb. (450 g) fresh mussels, washed

Salt and pepper to taste

Chopped fresh parsley to taste

6 lemon wedges
