1 cup shelled pistachio nuts

12 to 15 pound fresh ham, boned, rolled, and well tied

1 teaspoon crushed dried sage

Coarse salt and freshly ground black pepper

6 tablespoons unsalted butter

1/3 cup apple jelly

1 teaspoon aniseed, crushed (optional)
