about 3 T. seedless raspberry jam

about 400 g frangipane (recipe follows)

8 pear halves, peeled and cored (use canned pears, or ripe fresh ones; if they’re firm, poach them first so they’re fork-tender)

lemon juice, if using fresh pears

1 egg

about 2 T. strained apricot jam

sliced almonds, lightly toasted

pearl sugar
