1 large eggplant (1 pound), cut lengthwise into 1/4" slices

1 pound yellow squash, cut lengthwise into 1/4" slices

1 red onion, sliced crosswise

2 sweet red peppers

2 tablespoons chopped sun-dried tomatoes

2 ounces nonfat cream cheese, at room temperature

2 ounces goat cheese

2 tablespoons nonfat sour cream

2 teaspoons chopped fresh thyme

1 tablespoon chopped pistachios (optional)

1 loaf crusty multigrain French bread, halved lengthwise through the side
