Ingredients for 8 servings

32 ounce sauerkraut, drained, rinsed and squeezed dry

1 bottle Riesling or other Alsatian white wine

1 x white onion, thinly sliced

3 x carrots, peeled and thinly sliced

1/2 cup Golden Raisins

1 cup diced fresh pineapple

6 x crushed Juniper Berries

3 x whole cloves

10 x smashed peppercorns

4 pounds Cornish game hens, each about a pound (or 2 pheasants)

2 tbsp Brandy

1 pinch salt and pepper to taste

1/2 x apple, cut in rough chunks

1/2 x small rib celery, cut in 1-inch pieces

1/2 x small onion, cut in chunks

4 x cloves garlic, peeled and chopped

8 x Thin BACON SLICES

1/2 pound thick-cut bacon, cubed
