Ingredients for 4 servings

4 large, ripe tomatoes, hollowed out

2 tablespoons olive oil, plus more for brushing and finishing tomatoes

1 cup of flesh and juice scooped from the tomatoes, combined

1 cup cooked lentils

3/4 cup uncooked quinoa

1/2 cup crumbled feta cheese

1/4 cup packed chopped fresh basil, plus more for garnish

1 medium shallot, minced

Juice of 1/2 a lemon, plus more to finish

Salt and pepper, to taste
