1 cup sliced green onions

3 (15-ounce) cans black-eyed peas, rinsed and drained

2 ribs celery, chopped

1 Anaheim or jalapeƱo, stemmed, seeded and finely chopped

2 cloves garlic, finely chopped

2 tablespoons red wine vinegar

Hot sauce to taste

1/2 red onion, diced

1 (4-ounce) jar pimento peppers, drained

1 yellow or orange bell pepper, cored, seeded and chopped

1 teaspoon dried oregano

2 tablespoons extra virgin olive oil

Salt and pepper to taste

1 teaspoon mustard
