812 x dried hot red chillies

2 stk fresh or 2 tbsp dried sliced lemon grass

4 x cm cube or 56 slices dried galangal (qv)

15 gm candlenuts or cashew nuts

100 gm shallots or onions chopped

2 1/2 x cm cube fresh ginger chopped

3 clv garlic chopped

tsp ground turmeric

1 tsp paprika

1 kg fish steaks

2 1/2 x cm thick

1 1/2 tsp salt

2 1/2 tbl lime or lemon juice

4 tbl vegetable oil

45 x fresh kaffir lime leaves or 7.5cm x 1 cm lemon rind

10 x fresh curry leaves or 3 dried bay leaves

1520 x fresh mint leaves

810 x cherry or very small tomatoes
