2 tablespoons olive or vegetable oil

2 cloves garlic, finely chopped

1 large red onion, cut into thin wedges

1 cup uncooked quick-cooking brown rice

1 cup vegetable or chicken broth

1 can (14 1/2 ounces) stewed tomatoes, undrained

1/2 teaspoon saffron threads, crushed

1 bag (1 pound) frozen petite peas, baby whole carrots, snow peas and baby cob corn (or other combination)
