1/2 small red onion, finely chopped

1 lime, juiced

¼ cup cilantro leaves, roughly chopped

1 tsp salt

¼ tsp cayenne pepper

½ tsp chili powder

12 oz shredded Monterey Jack cheese or Mild White Cheddar

8 tortillas, traditional or whole wheat
