Ingredients for 4 servings

3/4 pound (12 ounces) left-over cooked beef (roast beef, steak, London broil etc.) or 1 pound ground beef, chunky grind

1-2 tabelspoons olive oil

1/2 medium onion, chopped

2 cloves of garlic, minced

1/4 cup Sauce Espagnole (Brown Sauce) or 1 Tbsp. *Bisto Brown gravy mix or 1 beef bouillon cube

1 tablespoon tomato paste

1 cup water

2 tablespoons fresh parsley, chopped

1 1/2 pounds potatoes, peeled and cut into quarters

1 cup milk or half and half

4 tablespoons butter, plus 1 teaspoon cut into small bits

3/4 cup gruyere cheese, grated

salt and freshly ground pepper

1/4 teaspoon paprika (optional)
