4 egg yolks

30 g of caster sugar

25 ml of elderflower cordial

1 sprig of fresh elderflower

4 slices of stale sourdough

200 ml of milk

4 eggs

30 ml of maple syrup

1/2 tsp of cinnamon

1 tsp of grated nutmeg

20 g of unsalted butter

600 g of Sweet Eve Strawberries, hulled and quartered

100 g of caster sugar

1 tbsp of balsamic vinegar

1 tbsp of fruity olive oil
