2 ounces (4 tablespoons, 1/2 stick) unsalted butter, chilled in the freezer for 20 minutes

3 tablespoons plus 1/2 cup heavy whipping cream

1 extra-large egg yolk, at room temperature

1/2 teaspoon pure vanilla extract

1 teaspoon Demerara or crystal sugar

2 cups (9 ounces) fresh raspberries

2 tablespoons (3/4 ounce) superfine sugar

1 tablespoon Grand Marnier or other orange liqueur, or Chambord (optional)

2 tablespoons clover honey

1 tablespoon thinly sliced crystallized ginger
