100 ml of red wine

60 ml of port

60 ml of veal glace

50 ml of Chicken stock

50 g of shallots, chopped

30 ml of red wine vinegar

15 ml of cream

1 punnet of blackberries

1 juniper berry

1/4 lemon, juiced


8 spring onions

200 ml of whole milk

2 g of lecithin

8 cobnuts

12 girolles mushrooms

1 sprig of thyme

12 brambles of wood sorrel
