Ingredients for 4 servings

1 tablespoon vegetable oil

1 large onion, peeled and diced

2 carrots, peeled and diced

4 cloves garlic, peeled and finely diced

1 green pepper, trimmed and diced

350 g Quorn mince

1 teaspoon ground hot chipotle chilli powder

1 teaspoon ground cumin

½ teaspoon ground coriander

2 tablespoons tomato ketchup

1 x 400g tin of chopped tomatoes

1 x 400g tin of red kidney beans, drained

1 x 400g tin of hot water (I used the tomato tin)

Salt and pepper to taste
