2-3 Tb. butter

12 oz . Flour (about 2 cups)

1⁄4 tsp. Nutmeg

1 tsp. Salt

4 Whole Eggs

1⁄2 cup water

1⁄2 cup milk

2 Tb. butter

1 shallot, peeled and sliced

1/2 cup white wine

2 cups heavy cream

1/2 lemon, juiced

2 Tb. drained capers

2 Tb. whole grain mustard

1 Tb. fresh thyme leaves
