I substituted 2 cups oat flour for the AP flour, & 1/2 cup Earth Balance Organic Soy Nog (cuz I had it leftover to use up) for the buttermilk & they turned out delish! My 5 yr old son loved them!!!

1 cup sugar

6 tbsp butter

2 x eggs

2 tsp vanilla

1/2 cup buttermilk

1 cup pumpkin puree

3 cup powdered sugar

1/2 tsp vanilla
