450 g of caster sugar

1 tbsp of liquid glucose

200 ml of water

2 egg whites

9 gelatine leaves, soaked in water until soft

1 vanilla pod, seeds scraped out

1 tsp of olive oil

cornflour for dusting

icing sugar for dusting

3 apples, peeled, core removed, thickly sliced

50 g of sugar

50 g of butter

4 sprigs of fresh thyme
