  • 2 tbs vegetable oil
  • 1 brown onion, diced
  • 3 garlic cloves, minced
  • 2 chillies, diced (optional)
  • 2 tsp fennel seeds
  • 2 tsp good quality curry powder
  • 750 g (1½ lb) (approx. 4) potatoes, roughly chopped
  • 220 g (8 oz) (approx. 3) carrots, peeled & roughly chopped
  • 220 g (8 oz) (approx. 1) zucchini, roughly chopped
  • 1 cos or ½ an iceberg lettuce, roughly chopped
  • 1 cup pearly barley
  • ¾ cup raw almonds
  • 2½ lts (5 pts) vegetable stock
