Ingredients for 4 servings

Metal or wooden skewers*

1 cup quick-cooking brown rice

2 pounds sirloin steak or beef round, cut into 2-inch cubes

2 teaspoons sesame oil

Cooking spray

1 tablespoon sesame seeds

1/2 cup minced red bell pepper

1 tablespoon rice wine vinegar

1/4 cup black bean sauce

*Cook's note: If you are using wooden skewers, soak them in water for 1 hour before using.

Salt and ground black pepper

1 large (or 2 medium) zucchini, cut into 1/2-inch rounds
