100 g bar dark chocolate (minimum 70% solids), broken into pieces

6 large egg yolks

100.0g unsalted butter , cut into cubes

1 vanilla pod

25.0g butter

FOR THE meringue TOPPING

1 large orange , zest only

3.0 tbsp caster sugar

5.0 tbsp warm water

600 ml tub orange sorbet (you will only need approx 400ml), softened slightly
