Ingredients for 6 servings

2 tablespoons extra-virgin olive oil

1 large yellow onion, finely diced

5 cloves garlic, minced

2 carrots, peeled and chopped

1 leek, halved, cleaned, and finely chopped

1 can (15 ounces) diced tomatoes

8 cups chicken stock

1 can (15 ounces) kidney beans, rinsed and drained

1 can (15 ounces) cannellini beans, rinsed and drained

1/3 cup green beans, trimmed and chopped on the bias

1 cup any shape pasta (optional)

1 tablespoon sea salt
