Ingredients for 6 servings

2 x FOR THE SPICE MIX --- cinnamon sticks, broken in small pieces

16 x whole cloves

4 tsp whole cumin seeds

1 tbsp Coriander Seeds

2 tbsp Fennel Seeds

1 tsp whole black peppercorns

2 tbsp Sweet Paprika

1 tbsp Kosher Salt

1 x FOR THE CHICKEN --- free range chicken, about 3 1/2 to 4 pounds

1 x Lemon, halved

1/4 bunch Cilantro

1 head Garlic, halved horizontally

3 tbsp Extra Virgin Olive Oil

Freshly ground black pepper to taste

1 cup FOR THE APRICOT COUSCOUS -- Couscous

1 1/2 cup cold water

10 x dried apricots

1/2 cup whole almonds, toasted at 365 degrees F for about 10 minutes

2 x green onions, thinly sliced

2 x handfuls fresh mint, chopped

2 x handfuls fresh cilantro, chopped

2 x Juice of 1/2 lemon

Kosher salt and freshly ground black pepper, to taste

FOR THE GREEN OLIVE SAUCE --- Extra Virgin Olive Oil

3 x Shallots, sliced

1 x fresh red chile, split lengthwise

1/2 pound large green spanish olives, pitted

1/4 bunch fresh flat leaf parsley, stemmed

2 tbsp Sherry Vinegar

TO SERVE --- Lavash bread
