4 to 6 tablespoons vegetable oil

2 bunches watercress

2 bunches medium-size carrots

1 large shallot

3 tablespoons minced fresh ginger

2 tablespoons butter

About 1 1/2 cups chicken stock

Pinch cayenne

Pinch allspice

1 tablespoon honey
