I omitted the chili sauce and subbed oyster sauce for the hoisin. Turned out great! The kids love it, onions and all. Would definitely make this again.

Ingredients

2 (3 1/2-ounce) bags boil-in-bag long-grain white rice

7 teaspoons lower-sodium soy sauce, divided

1 teaspoon cornstarch

12 ounces skinless, boneless chicken breast halves, cut into 1/2-inch pieces

2 tablespoons hoisin sauce

2 tablespoons rice wine vinegar

2 tablespoons fresh lime juice

1 teaspoon chili paste with garlic

2 tablespoons canola oil, divided

2 large eggs, lightly beaten

1 cup chopped white onion

1 teaspoon grated peeled fresh ginger

3 garlic cloves, minced

1 cup frozen green peas, thawed

1/2 cup chopped green onions
