4 sprigs thyme

6 medium zucchini, sliced evenly into 1/3” rounds

3 x plum tomatoes, sliced very thinly

Lasagna Noodles for 3 layers

1/4 cup basil pesto

1 lb ricotta cheese

1/2 cup grated Parmesan cheese

1 x zest of lemon

1/8 cup 1 T chopped parsley

8 oz shredded mozzarella

1 cup fresh breadcrumbs

1 tbsp Dijon mustard

8 tbsp olive oil

3 tbsp butter

1/4 lb Optional: Greens from ramps
