Ingredients for 12 servings

12 egg whites from large organic eggs (approximately 2 cups)

1 cup loosely packed fresh basil

¼ cup fresh Italian parsley, chopped small

4 tablespoons extra virgin olive oil

2 medium zucchini chopped small

½ medium yellow onion chopped small

3 scallions chopped

2 fresh Sage leaves chopped

2 sprigs fresh thyme leaves pulled off

Pinch of kosher salt and fresh ground black pepper

2 cups of tomato sauce or favorite jar sauce. I recommend RAO’S Tomato Basil

1-cup goat or feta cheese cut into small cubes

1 cup freshly grated Reggiano Parmesan
