6 tablespoons unsalted butter, at room temperature

1/4 cup granulated sugar

1 large egg yolk

1 cup pastry flour

1/4 teaspoon salt

1 tablespoon cream

2 1/4 cups heavy cream, divided

1 cup coffee beans, espresso roast (or another dark roast)

the zest of 2 lemons, peeled off in strips with a vegetable peeler (but be very careful not to get any pith)

1/2 cup lightly packed light brown sugar

4 large egg yolks

3 ounces good bittersweet chocolate, finely chopped
