  • 3 qts chicken stock
  • 2 qts water
  • 2 cups dry Italian white wine like Pinot Grigio
  • 2 large stalks celery roughly chopped
  • 6 bay leaves
  • 3 sprigs thyme
  • 3 lemons cut in half
  • 3 heads of garlic, halved across their equator
  • 1 large Spanish onion, peeled and quartered lengthwise
  • 4 sprigs parsley
  • 1 lb kale, cleaned and stems trimmed
  • 4 fresh artichokes, trimmed and halved lengthwise, fuzzy choke removed
  • 16 small redskin potatoes
  • 1 lb cooked link sweet Italian sausage, cut into pieces
  • 1 lb cooked hot Italian sausage, cut into pieces
  • 1 Tbsp whole coriander seed
  • 2 tsp mustard seed
  • 1/2 Tbsp black peppercorns
  • 1 Tbsp dried Italian seasoning
  • 1 cup sour cream
  • 1 Tbsp Dijon mustard
  • 1 Tbsp grainy mustard
  • Zest and juice of one lemon
  • 3 scallions, minced
  • 2 Tbsps olive oil
  • Salt and pepper
