Ingredients for 8 servings

3 lbs beef stew meat

1 large Japanese sweet potato

2-4  carrots

2-3  celery  ribs

2 tbsps onion powder

2 tbsps garlic powder

1 large red onion

2 tbsps Worcestershire sauce (Optional)

3 tbsps  white vinegar

1  bay leaf

1 qt beef broth

2 cup  red wine (optional)

1 can tomato paste

1 sprig or 1/2 tsp dried fresh thyme

2 tbsps arrowroot starch

sea salt & black pepper

Preparation

If you have time, I like to marinate meats that are going in the Crockpot the night before. Take the beef and place it in a bowl with a lid and add the worcestershire, garlic powder, onion powder, sea salt & black pepper and white vinegar then use your hands to really combine spices. Place in the fridge overnight.

Take out your handy-dandy crockpot. Cut up the japanese sweet potato into medium size pieces. Add potatoes and the meat to the crockpot and stir in tomato paste, beef stock, red wine and make sure it all gets combined. Then add celery, carrots, onion, bay leaf, and thyme to the crockpot.

Cook on high for 6-8 hours.

Right before you serve put the arrowroot starch in bowl and add a couple ladles at a time of the liquids from the crockpot and whisk until smooth. It will look like a gravy. Then add it to the crockpot to thicken the sauce. Stir for a couple minutes and enjoy.
