4 ounces chèvre (goat) cheese

8 ounces European-style butter, chilled

2 tablespoons unsalted butter

2 tablespoons melted butter

Pastry

Pinch fresh grated nutmeg (about 1/4 teaspoon)

Pinch of cayenne pepper or piment d’espelette

2 cups half-and-half

2 cups organic, unbleached all-purpose flour, plus more for rolling
