50.0g blanched almonds , fried in butter until browned

2.0 tbsp olive oil

175.0g dried chickpeas

2.0 tsp ground cumin

450.0g carrots , cut into thick slices

1.0 tsp freshly ground black pepper

pinch of saffron strands

2 fresh green chillies , seeded and finely chopped

TO SERVE

3 garlic cloves , finely chopped

2.0 tsp finely chooped fresh root ginger

140.0g ready-to-eat dried apricots

2 cm /0.25in piece of cinnamon stick

1.0 tsp clear honey

2.0 tsp ground coriander

2 medium onions , chopped

1.0 tsp paprika

2 large tomatoes , peeled, seeded and chopped
