When in Maine, cook fiddleheads! I'm making this tonight with zucchini linguini rather than pasta and a little less oil/butter...I'll let you know how it goes!

Ingredients for 4 servings

1/2 pound fiddleheads , trimmed and well cleaned

1 tbs olive oil

2 tbs butter

1 pinch red pepper flakes

2 x wild leeks/ramps , chopped or garlic

1/4 x preserved lemon peel , chopped

1/2 pound shrimp , shelled and deveined

1/4 cup white wine

1 x lemon , juice and zest

1/2 pound linguine , cooked

1 tbs parsley , chopped

1 x parmigiano reggiano to taste , grated
