Ingredients for 4 servings

4 chicken breasts, skinless and butterflied

400 g of panko breadcrumbs

4 eggs

100 ml of milk

200 g of flour


25 g of butter

1 shallot, sliced thinly

1 garlic clove, sliced thinly

20 g of flour

100 ml of Knorr Chicken stock

75 ml of coconut milk

1 1/2 tbsp of curry powder

100 g of butter, softened

1 small onion, chopped

1 garlic clove, crushed

2 tbsp of olive oil

1/4 tsp of coriander seeds

1/4 tsp of cumin seeds

1/4 tsp of chilli powder

1/4 tsp of ground coriander

1 tsp of fenugreek seeds

350 g of baby spinach, washed

300 g of potato, peeled and diced into 5mm cubes

300 g of butternut squash, peeled and diced into 5mm cubes

1 handful of coriander
