Ingredients for 10 servings

1/2 cup vegetable oil

1 cup sugar

2 medium bananas, very ripe

1/2 cup sour cream

2 medium eggs

1 tsp vanilla extract

1 tbsp baking powder

1/2 tsp salt

2 1/2 cups flour

Preparation

1.

Preheat oven to 350. Carefully prep loaf pan by oiling and flouring the bottom of pan only.

2.

Combine oil, sugar, and bananas. Mix in sour cream and vanilla.

3.

Add in eggs and salt.

4.

Mix in dry ingredients until just moistened.

5.

Pour into pan and bake approx 1 hour or until toothpick comes out clean.
