zest from 1 lemon

1/4 cup fresh lemon juice

1/4 cup white vinegar

4 cloves garlic, roughly chopped

1 1/2 teaspoon sugar

1 teaspoon seasoning salt

1/4 teaspoon pepper

1/4 teaspoon red pepper

1 teaspoon Italian seasoning

1/4 teaspoon oregano

1/2 cup olive oil (OBB Garlic, lemon, basil, or extra virgin)

1 1/2 – 2 lb flank steak

non-stick spray or drizzle of olive oil

10-12 ounce pack grape tomatoes

6 oz jar marinated artichoke hearts, drained and roughly chopped

2 cups cooked brown rice (or quinoa, cous cous, or white rice)

1/4 cup chopped fresh parsley

1/4 cup reduced fat or fat free feta cheese
