2 medium (about 4 lb) butternut squash

2 Tbsp butter

1 medium red or yellow onion, chopped

1½ tsp salt

2 medium Granny Smith apples, peeled and thinly sliced.

½ tsp crumbled dried (or rubbed) sage

¼ tsp dried thyme 4 cup water

Up to 1 Tbsp fresh lemon juice, as needed

Up to 1 Tbsp brown sugar (light or dark), as needed
