  • PEANUT SAUCE:
  • 1/4 cup peanut butter
  • 1/4 cup cilantro leaves
  • 2 Tbsps water
  • 4 tsps honey
  • 1 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • 1 clove garlic, smashed and peeled
  • 1/8 tsp cayenne pepper
  • SUMMER ROLLS:
  • 2 ozs thin rice or cellophane noodles
  • 1 small red bell pepper, slivered
  • 1 medium carrot, cut into thin matchsticks
  • 1/3 cup fresh basil leaves, torn into bite-size pieces
  • 2 tsps dijon mustard
  • 2 tsps dark sesame oil
  • 8 round spring roll wrappers (6 inches)
