Ingredients for 4 servings

4 (4-piece) boneless skinless chicken breast halves

4 cups cooked and cooled brown rice, preferably made a day ahead

2 tablespoons peanut oil or vegetable oil

2 garlic cloves, minced

1 small yellow onion, minced

1 tsp minced fresh ginger

1/4 to 1/2 teaspoon red pepper flakes

1/2 lb sugar snap peas, strings removed

1/2 lb bite-size broccoli florets

1/2 cup fresh corn kernels (from about 1 small ear)

1/2 small red bell pepper, stemmed, seeded, and cut into ¼-inch dice

8 asparagus spears, trimmed and cut diagonally into ¼-inch slices

1 large egg, lightly beaten

2 tbsp low-sodium soy sauce

Kosher salt

Freshly ground black pepper

2 tbsp coarsely chopped fresh cilantro leaves, for garnish

2 scallions, thinly sliced, for garnish

1/4 cup whole coriander seeds

2 tbsp whole green cardamom seeds

2 tbsp whole cumin seeds

2 tbsp whole yellow mustard seeds

1 tbsp plus 1 tsp whole fenugreek seeds

2 tsp whole cloves

1 tsp whole black peppercorns

1 cinnamon stick, broken into several pieces

1/4 cup ground turmeric

2 tbsp ground ginger

1/2 tbsp ground cayenne
