1 10-ounce jar fresh oysters

4 tablespoons butter

2/3 cup breadcrumbs

3 tablespoons olive oil

1 four-ounce andouille sausage, casing removed and finely chopped

1 medium onion, diced fine

1/2 green bell pepper, diced fine

3 stalks celery, diced fine

2 cloves garlic, finely minced

1/4 teaspoon dried basil

1/4 teaspoon dried marjoram

1/2 teaspoon dried thyme

1/2 teaspoon dried sage

1/2 teaspoon Creole seasoning

-- Salt and pepper to taste

-- Shake of Spike seasoning (optional)

8 cups of day-old bread cubes, from a 1-pound loaf bread (most of the crust removed) or 10-ounce box of commercial herb-seasoned cube stuffing

1 to 1 1/2 cups low-salt chicken broth

1/4 cup chopped parsley

1 egg, beaten
