1 pound pasta – I used rigatoni

3 small – medium carrots, peeled and chopped

1 small onion, peeled and chopped

1 red bell pepper, seeded and chopped

2 garlic cloves

1/4 cup olive oil

3-4 sprigs fresh thyme

1/2 teaspoon dried oregano

2 teaspoons salt

1 teaspoon freshly ground black pepper

6 ounces assorted mushrooms, stemmed and chopped

2 tablespoons tomato paste

1 14oz can of crushed tomatoes

1/2 cup red wine

1/4 cup Parmesan
