1 cup all-purpose flour1 teaspoon Dijon mustard

1 teaspoon dry mustard

-- Freshly ground pepper, to taste

1/4 teaspoon cayenne pepper

1 1/4 cups grated Comte or Swiss Gruyere (about 3 ounces)

4 large eggs, at room temperature

1 egg mixed with 2 teaspoons water, for egg wash
