Ingredients

4 1/2 cups low sodium good quality vegetable stock

3 cups fresh shucked English/spring peas

salt and fresh ground pepper, to taste

4 tbsp. chopped fresh mixed herbs – you can use basil, mint, tarragon, parsley or cutting celery – 3 tbsp. used in recipe and 1 tbsp. as garnish

2 tbsp. chopped dry roasted pistachios – optional – for garnish
