Ingredients for 2 servings

1/2 cup homemade or low-salt canned chicken or fish stock

1 large shallot, finely chopped

2 cod fillets, about 6 oz. each

Salt and freshly ground black pepper to taste

4 plum tomatoes, peeled, seeded, and chopped (canned is fine: see  Substituting canned tomatoes for fresh )  

1 clove garlic, minced

1/4 cup dry white wine

1 Tbs. chopped fresh tarragon

3 Tbs. olive oil
